Hooray it’s almost the weekend! For me weekends are made for brunches, and what better way to brunch than pancakes? These super simple, super healthy pancakes are the perfect partner to your weekend, although I can’t promise you won’t want them every day of the week! 😉 The great news is that they’re packed full of healthy delicious foods to give your body the nutrients it needs, whilst still packing a seriously yummy punch!
Makes: 8 pancakes
Simply blend together until it forms a smooth creamy batter:
- 2 ripe bananas
- 4 eggs
- A pinch of cinnamon
- 1 cup of oats
Place a small amount of coconut oil in a pan, wait until the oil is hot. Then carefully spoon the batter into small pancake shapes. Cook for a couple of minutes on each side till golden. You’ll need to do a few rounds of this to make the 8 pancakes.
Serve with you favorite toppings, pictured here with cashew butter, goji berries, blueberries, coconut & pecans – delicious!
